Zucchini noodles & meaty tahini tomato dressing

T’is that time of the year again, where the words fasting and feasting go hand in hand. While most people are tricked by hunger to cook everything their heart desires and attack the iftar the table within minutes, I urge you to take a different approach.  It’s easy to get carried away with cooking or consuming too much food, because we haven’t trained our brains to take control. Hell!! half of our health problems as a nation is suffering because bad eating habits, lack of knowledge and lack of interest in believing that food can be your friend or your enemy.

For me, I like to do my part by experiencing Ramadan differently. It may sound extreme to many people, especially because it’s not the cultural norm. For the second year in a row, I’ve decided to take on the Raw lifestyle and at times go Vegan for when I’m craving cooked food. This isn’t about joining in on a fad or a trend on the internet. If anything, researching and following people who live like this has inspired me to consider food as a way of healing as opposed to filling your tummy only.

This is not easy if you don’t have a support system of friends or family who may join the challenge with you, so always find people you can fall back on for help or additional motivation. Thanks to my friends, Luciana and Anis for encouraging me to start this with them. I’m forever thankful to them for helping me see the endless opportunities of getting creative in the kitchen. Trust me, it is a lot of fun. Just keep an open mind.

I’d like to share with you a flavorful and filling salad that I had yesterday. You can whip it up in minutes and best part, requires no cooking!! The recipe yields one person

For the Salad

½ a spiralised green courgette

1 spiralized cucumber

2 sliced radishes

¼ Sliced green pepper

½ cup mushrooms of your choice

For the dressing

3 cherry tomatoes

1 tbsp tahini

¼ sliced green pepper

Small piece of ginger

1tsp chilli paste (optional)

Sea Salt to taste

Extra Virgin Olive Oil


To make:

Mix the salad ingredients in a bowl. Note, if you don’t have a spiralizer, you can shave the cucumber and zucchini with a potato peeler.

Blitz up all the dressing ingredients and pour on salad.

Serve immediately J
